Seafood Tasting Dinner with wine from Denis Vaughan’s cellar

The Irish Times is delighted to partner with Vaughan’s for a very special Seafood Tasting Dinner with incredible wine from Denis Vaughan’s cellar, introduced by our wine expert John Wilson. Guests will be guided through a five-course dinner, starting with Flaggy Shore Oysters, moving onto Bluefin tuna tartare, followed by Galway Bay Filo Langoustines and then onto a divine sounding slow-roasted Black Sole with smoked almonds, brown shrimp and chicken butter and finishing with a delicious Mille-Feuille. Each course will be paired perfectly with a beautiful wine, including Champagne Delamotte, a Montagny Blanc, a Mersault and a Gevrey Chambertin, which John Wilson will talk through.

Just over 45 years ago, John and Annette Vaughan opened Vaughan’s Anchor Inn in beautiful Liscannor in west Clare, and their son Denis took over the kitchens when he was old enough, putting it on the map as a seafood destination serving the freshest fish and shellfish landed locally. Denis’s wife, Lisa, married into Clare from Dublin and joined the business, looking after everything from bookings to front-of-house. Then Denis and Lisa’s eldest sons, James and Denis Jr., became the third generation to carry on the family tradition. Chef James has looked after the kitchens in Vaughan’s Anchor Inn since 2021, and his fantastic seafood cooking in the cosiest of settings in the pretty village of Liscannor, paired with Denis’s incredible wine list, means that Vaughan’s Anchor Inn remains one of the best seafood restaurants in the country.
